Chocolate PB Banana Bread

I don't know about you but I am that person that purposely buys over ripe bananas in the food shop. For 2 reasons, 1 to chop up and freeze for smoothies / nice cream and the other is banana bread! I just love having it in the house as a tasty night time treat. This recipe is inspired by 2 amazing bakers Hebe and Ash, (if you don't follow them already ... DO) and last time I made it I didn't really have a recipe as such but I thought I would try to create one for you all.

Makes 3 indulgent single serve loafs or 6 tasty treats or if made into one loaf probably 6 slices

Ingredients

250g banana (aprox 2 large)

50g smooth peanut butter (normally Meridians)

1 egg

80 ml Almond milk

50g oat flour (blended oats)

10g powdered peanut butter

15g cacao powder (Funktional Foods)

60g Vanilla Protein Powder (I used MyProtein Vegan Blend)

1/2 tsp baking powder

Topping:

20g peanut butter

20g Date Netar (or alternative sweetener)

2 squares (20g) 85% dark chocolate

Method

* Blend banana, Egg, Peanut Butter and Almond Milk

* Mix all dry ingredients into a bowl then add the banana mixture

*Stir all together getting rid of all lumps - add more milk if needed

*Pour into lined baking tin of choice and place in a preheated oven (180 degrees) for 20 mins or until cooked through

*Once cooled melt the chocolate in one bowl and the peanut butter in another, add the date nectar to the pb to create a caramel

*Cover the top with the chocolate, then down the centre place the pb caramel before swirling together
