Chocolate Coconut & Vanilla Krispie Bars

Chocolate is good for the soul and so were Rice Krispie Squares as a kid :). So I decided to make my own that are #lowfodmap friendly. Using a new Vegan Protein I'm trying The Good Guru Vanilla flavour, coconut and my fave dark chocolate Lindt excellence, this one is coconut intense.

Makes 12

Ingredients

2 Cups Gluten Free Rice Pops (Nestle)

2 Tblsp desiccated coconut

1 scoop Vanilla Vegan Protein ( The Good Guru)

3 Tblsp Coconut Peanut Butter (Meridians)

5 Tblsp Maple Syrup

Lidnt Excellence Coconut Intense

Method

Mix all the ingredients minus the chocolate in a bowl until the Rice Pops are well and truly covered

Place in a lined baking tray and pop in the freezer for 30 mins to set

Melt the chocolate and pour over the tray bake when set then place back in the freezer to set for another 30 mins

Once set cut up into slices and enjoy as a snack or dessert
