Sweet Potato, Goats cheese & seed slice

Tomorrow (3rd April) is becoming International Egg White day launched by Two Chicks Egg Whites company. I have nothing against the humble egg yolk but sometimes only the white is needed so having carton of liquid egg whites is a god send. In honour of tomorrow I thought I would share my recipe for a savoury slice. I used pea protein in mine as I can't eat whey but I wanted some additional protein in there. You could use unflavoured whey protein or regular flour just be careful with the consistency. This was also made using a new product Jakes Boost Superfood spread which was delicious - if you are looking for a savoury spread I would highly recommend.

Makes 12

Ingredients

100g Protein Pow Pea Protein

40g Sukrin Sesame Flour

20g Milled Linseed

50g Jakes Boost Superfood Spread

300g Cooked and Peeled Sweet Potato

30g Two Chicks Liquid Egg White

30g Goats Cheese

150ml Unsweetened Almond Milk

100ml Water

1 tsp paprika, cayenne pepper, turmeric and pinch of salt and pepper

1 tsp baking powder

Method

*Pre Heat the oven to 180 degrees

*Mix in a bowl all the dry ingredients

* Blend together the sweet potato, superfood spread, egg white and almond milk

* Add to dry mixture and combine, add in a bit of water at a time until it is all mixed together and has a bread like consistency. Add flavouring to taste.

*Place into a lined baking tin and press the goats cheese evenly into the mixture

* Bake for 15 minutes or until cooked through

*Allow to cool and slice into 12 pieces. Can be served warm or cold and will last for 5 days in the fridge
