Salted Caramel Banana Muffins


It's been a while since I've posted a recipe so I'm sorry about that, however you are in for a treat :) I recently got my hands on Vivo Lifes new flavour of their PERFORM protein powder - SALTED MACA CARAMEL and guys ... its so good ! It actually tastes like salted caramel and unlike alot of vegan proteins it doesn't taste of earth. Yey :) Each serving has 25g protein from the mix of pea and hemp protein , 6g BCAA, no added sugar, all natural flavourings as well as digestive enzymes. So I would recommend if you are looking for a new dairy free protein alternative.

Anyway onto the recipe :)


Salted Caramel Banana Muffins

Makes 8

Ingredients

2 scoops Vivo Life Salted Maca Caramel

50g oat flour (blended oats)

10g Sukrin coconut flour

20g milled linseed

3 bananas

120g liquid egg whites (Two Chicks)

1 pouch (90g) apple puree

1 tsp truvia

1/2 tsp salted caramel flavouring

1/2 tsp baking powder

pinch pink salt

Method

*Place all the dry ingriedients into a bowl and mix together

*Blend the bananas with the apple puree and egg whites

*Mix into the dry mix

*Add the extra flavourings to bring out the taste

*Spoon into 8 muffin cases and bake for 10-12 mins (or until cooked through) at 180 degrees

*Enjoy :)
