Christmas cake & chocolate



Christmas Chocolate Brownie

Makes 12-18

Another festive recipe for you lovely lot :) nothing better to go with your hot chocolate than a gooey brownie filled fulled of Christmas flavours. I thought Christmas equals mulled wine, cinnamon and chocolate so voila this was created. The brownie base was inspired by a recipe from the Lean Machines book.

Ingredients

385g cooked and peeled sweet potato

50g avocado

35g Beloved date nectar

50g TwoChicks liquid egg whites

100ml Unsweetened almond milk

75g oat flour

60g cocoa powder

55g Sukrin sesame flour

Cinnamon

Ginger

Ground cloves

Mulled spice sachets x 2

Baking powder

Method

*Soak the mulled wine in 200ml water to infuse it

*Blend your sweet potato and avocado until smooth

* Add in the date nectar, egg whites and almond milk

* Mix all the dry ingredients together in a bowl minus the spices then add the wet mixture and stir

* Now add in the spices and the mulled wine infused water based on your tastes I personally went with 1/2 tsp cloves , 2 tsp cinnamon, 1 tsp ginger

* Pour into a lined baking and bake for 15 mins at 180 degrees

* Allow to cool and cut into your desired size of cake bar

*Sprinkle with more cinnamon and enjoy

Peppermint bark

Fancy an after dinner mint with a difference? Or a Christmas themed Christmas chocolate?

Ingredients

50g Cacao Butter

35g Honey

25g Cocoa Powder

60g Craneberries

20g Desiccated coconut

Method

*Melt the cacao butter and honey. Mix in the cocoa powder into smooth. Stir in the cranberries and coconut

*Pour into a lined tray and freeze until set

*Break jnto pieces

*Enjoy
