Cookie dough bars

Who doesn't love cookie dough ? Normally it can be quite high in sugar as well as being made with wheat so I use to make raw 'cookie dough' as a Friday night treat using chickpeas. Which always tasted fab - don't knock it until you try it. So I decided to see if it could work in a cake form and luckily it did :) and when tried people loved it too - and I promise you can't taste the chickpeas ...

Makes 24 little bites or 12 bigger bars


1 can drained chickpeas

85g Vanilla Protein (I used Natural Whey)

100g cashew butter (I used Meridians)

50g egg whites (I used two chicks)

10g Sukrin coconut flour

100ml unsweetened Almond Milk

1tsp baking powder

Optional: 30ml sugar free syrup (I used TRKG Irish Cream)

80g dark chocolate chips

Sweet Freedom Choc shot for drizzling


* Blend the chickpeas with the almond milk until smooth

* Mix all the dry ingredients together in a bowl then add in the chickpea mixture

*Melt the cashew butter slightly so it can be mixed well

*Add into the bowl with the egg whites & syrup and mix

*Stir in the chocolate chips

*Pour into a lined baking tin and bake for 12-15 mins

* Allow to cool, drizzle with choc shot and cut into slices.
