Banana Bread

Everyone loves a bit of cake with a cup of tea or coffee :) Well now you can have a slice of something that won't fill your body full of sugar and leave you hungry for more. I know there seems to have been a bit of a banana bread hype on social media so here is my version to add to it :)

Makes 6


2 bananas (215g)

70g Protein Powder ( Vanilla / Snickerdoodle / Banoffee or Salted Caramel are my faves - in this it is Natural Whey Vanilla)

55g Sukrin Cake Mix *

20g Coconut Flour (I used Sukrin)

30g Liquid Egg White (TwoChicks) or 1 egg white

1/2 tsp baking powder

dash unsweetened almond milk (Alpro)

*If you can't get hold of this then go 40g buckwheat or self raising flour with 35g coconut flour rather than 20g - play around with the liquids to make the right consistency*


*Blend the banana & egg white

*Mix all the dry ingredients together then add the banana mix. I personally prefer to blend it all as it creates a smoother consistency

*If the batter is to dry add more milk if it is too runny add a bit more coconut flour

*Pour into a lined loaf tin and bake for 15 mins at 180 degrees

Leave to cool on a wire rack then slice into 6 pieces.
