This recipe was inspired by Samantha Hadadi as her brownies kept popping up all over my social media feed so I needed to make some. I decided to switch up the sweet potato for butternut squash and add in some extra protein. I wasn't going to post the recipe but as I was asked here it is :)
150g butternut squash (I buy frozen chopped packs from tescos)
2 tbsp (28g) Sukrin Cake Mix
2 tbsp (28g) Coconut flour (Sukrin)
2 tbsp (17g) Cacao power (KaizenLiving)
30g Vanilla Whey (Natural Whey)
25g Coconut Oil
75g Date Nectar
25g Dark Chocolate
1/4 tsp baking powder
optional tsp coffee (bring out chocolate taste)
1 scoop vanilla protein powder
55g peanut butter (Merdians)
50g Greek Yogurt
50 ml unsweetened almond milk (alpro)
*Cook the squash and allow to cool
*Blend until smooth. Melt the coconut oil and dark chocolate
*Add all the other ingredients to the squash and blend. Then stir in chocolate and oil.
*Pour mixture into a lined baking tray and bake for 15 mins (until cooked through) at 180 degrees
*Once cooked place on a wire rack to cool
*Microwave the pb for 30 secs to make extra runny.
*Stir in the yogurt and protein powder.
*Add in the milk a bit at a time to get the desired consistency.
*Spread over cooled brownies. Cut up and enjoy
