Easter Recipes

Not 1 but 3 tasty delights for you to enjoy this bank holiday :). Each bake is created to be gluten and refined sugar free until the easter chocolate is placed on top of 2 of them - so the topping is optional if you want to keep it clean. However I recommend adding them as it is Easter after all and a little bit of chocolate never hurt anyone ...

Easter Nests

Makes 8

50g Cacao Butter (I used one from Holland and Barrett) - Coconut oil would also work

50g Date Nectar (Beloved) or liquid sweetner

30g Cacao Powder (KaizenLiving) or Cocoa powder

3 Nutrixbix biscuits

15g Blueberry Muffin Whey (Natural Whey)

5g Cacao Powder

75g Quark or thick greek yogurt

1 tsp strawberry essence (I got this from asda)

10ml Unsweetened Almond Milk (Alpro)

16 Cadburys mini eggs

*Melt the Cacao butter and Date Nectar in a pan on low heat

*Add in the Cacao Powder stirring continously until all mixed in

*Take off the heat and break in the Nutribix and stir until all is coated

* Place into 8 silicone cupcake cases making sure to leave a slight indented centre

* Into the fridge for 30 mins - 1hr to set

*Mix together the filling ingredients adding more milk if needed to get a smooth consitency.

*When the nests are set add in a spoonful of the filling into each one and top with mini eggs

*Store in the fridge :)
