Chicken Chickpea Casserole

It might be March but the weather is definitley not springtime here! With it being so cold there is nothing more appealing than a big bowl of comfort food. However what with Summer supposedly on it's way it is that time of year we all start to watch what we eat a little more.

I have created this recipe with the idea of comfort food but still light and healthy. I was inspired as well by a seasoning packet I picked up at Shops4Supplements called Blend Bros. These packets are high protein seasonings using pea protein as the source.

The recipe can be made without this just use more of the other seasonings to boost flavour and the macros will differ.


Serves 5

Macros per serving 200 cals/ 4gF / 11.4gC / 28gP


1 can chickpeas drained

500g chopped chicken breast (I used Musclefood)

1 tblsp coconut oil (NaturalWhey)

15g Blend Bros seasoning - spanish tomato and chorizo

250g tinned chopped tomatoes

smoked paprika, salt and pepper to taste

Method (all in one pan)

* Melt the coconut oil and cook the chicken in it

*As the chicken starts to go white add in the chickpeas and spices

*Stir to make sure everything is coated and mixed well

*Add the tomatoes and leave to simmer for 10 mins

*Taste and add seasonings to your preference

*Leave to simmer until everything is cooked through

* Serve with a side of your choice

I decided to serve mine with some roasted veg cooked in coconut oil, pink salt, pepper and dried herbs
