Banoffee Cake Bars


I managed to get my hands on some of the new TRKG Lean Series Protein in banoffee flavour and I'm pretty excited to use it as I love this flavour!

It is 100% Whey blend with added Glutamine & BCAAs - you get 1.8g glutamine and 2g BCAAs per serving. Aswell as 29g Protein, 4gCarbs and 1.1g Fat with is pretty decent macros :)

I decided to fully embrace the banoffee flavour and use up some bananas to create this recipe. I created 16 smaller squares out of the recipe using a shallow traybake tin. However a loaf tin could alsi be used to create 8 bigger bars depending on how you feel.

Ingredients

250g / 2 large bananas

2 scoops/ 72g Banoffee TRKG protein

30g Sukrin Coconut flour

20g Buckwheat flour (Holland and Barrat)

1 tsp baking podwer

2 tsp stevia (Truvia)

1 tblsp Beloved Date Nectar

1 medium egg

30 ml liquid egg whites (Musclefood) / 1 egg white

100ml unsweetend almond milk

15ml sugar free TRKG caramel pecan syrup

Topping

75g Fat Free Greek Yogurt

1 scoop Protein Powder (vanilla or banoffe)

1 tsp sukrin icing sugar

Beloved Date Nectar for drizzle


Method

*Pre heat oven to 180 degrees and line a baking tray/tin. I use coconut oil (Natural Whey) to do this.

*Blend banana and almond milk. Pour mixture into a bowl.

*Add in the eggs and date nectar

*Whisk in the dry ingridients

*Add in the syrup and mix through. Check consitency - if too dry add more milk if too wet add more coconut flour a little at a time.

*Pour into lined tin and bake for 15 mins or until golden brown and cooked through.

*Allow to cool

*Once cooled whisk together the topping adding more icing sugar/liquid depending on consistency

*Optional drizzle of Beloved Date Nectar or honey

*Store in the fridge to keep topping fresh
