Salted caramel chocolate shortbread


I made some chocolate chip shortbread for someone at work and it smelt so good but sad for me I couldn't eat it ... the joys of an intolerance. But not to worry :) I decided to give a glutenfree version a go and it worked ! YAY


So here you go you lucky lot enjoy

I used salted caramel whey from Myprotein but you could use any flavours you wanted to create your shortbread.

Makes 12

Macros 83 cals / 5.9gF / 4.7C / 4.6P

Ingredients

60g Unsalted butter

55g MyProtein Salted Caramel Whey

40g Buckwheat flour

20g Truvia

Dash Jordans Salted caramel Sugarfree syrup

5g Kaizenliving cacao powder

Topping: 20g coconut oil 15g cacao powder (Kaizen)

Method

* Mix all the dry ingredients together

*Rub in butter and add syrup to form a dough

*Press mixture down onto a lined baking tray

*Bake for 10 mins at 160 degrees

*Melt coconut oil and add cacao - stir until smooth and pour onto the top of the cooled biscuits

*Sprinkle over truvia
